Ginger-Champagne Salmon Featuring Glenora’s Brut Champagne #908

Make any day a special occasion with salmon and champagne!

Ingredients

2 Tbsp. olive oil
4 serving pieces of salmon, seasoned with seafood seasoning
Non-stick cooking spray
3 cloves garlic, chopped OR 1 ½ Tbsp. minced garlic
3 Tbsp. fresh ginger, grated OR 1 Tbsp. ground ginger powder
2 jalapeno peppers, chopped
3 Tbsp. lime juice
½ C. cilantro, chopped OR 1 ½ Tbsp. dry cilantro
Seafood seasoning or seasoned salt to taste
Glenora Brut Champagne (or your favorite dry champagne)
2 Tbsp. cold butter

Directions

Preheat oven to 275 degrees.

Sear salmon in olive oil and place in a non-stick cooking sprayed baking pan then into the oven for no more than 15 minutes while you create the sauce. Sauté garlic, ginger, and peppers in the same pan that you just cooked the salmon in. Scrape up the “good little bits” and deglaze with champagne. Reduce over a high heat for 5 minutes; add lime juice then cilantro and season with seafood seasoning or seasoned salt to taste.

Plate salmon portions. Stir cold butter into sauce to give the sauce a rich shine then pour sauce over salmon portions, grab a flute of champagne and enjoy!
